Married Life, 10 Years Later

I can not believe that in one month it will be 10 years since I married my husband. Technically we've been together 12 years, but 10 as husband and wife. why do we never get to count those years? I loved those first two!

2002

We have both changed so much since that wonderful day in August 2002. We're a little wider in the waist, and thicker in the head.

We've had our share of tough times, and many many happy times.

2007

And wow, the things we have learned! How to be good parents, how to live for someone other then yourself, how to persevere, and how to love. How to not hurt him when he's a pain in the butt.

I love the friendship we now have. In recent years we have grown to such a comfortable/easy place. And we have a blast together! He can make me laugh so hard my belly hurts.

2012

I can not imagine what the next 10 years might bring, if it's anything like the first 10 then hang on because this is going to be a wild ride. Seriously, hang on. He takes corners in his pickup like we're on a nascar track.

I "Live" you honey ;)

Never Ending Choices

Choices, life is full of them.

Should I get a coffee table or use an ottoman instead?
Is it chilly, do the kids need pants for school and not shorts?
To clean the house or watch the Sex In The City movie?

Am I content or am I restless?

That last one is a choice I feel like I have to make every day. I am the restless type. I love change (mostly). It keeps me on my toes. When life stays the same for too long I get all jumpy and long for a new choice.

Some new choices have come up in our family life that could shake things up a bit.

My husbands career. He loves his job and plans on staying for a long time, but he is considering going back to college and completing his Bachelors degree. We would have to re-adjust our schedules to accommodate his studying and he would have way more on his already full plate... Still, it would open doors for him. And show our children how important furthering you education is. Choices.

My son made a big choice this week, he has stopped playing football. I am a little sad. He has played for almost 4 years now. He had asked not to play a few months ago. I made him a deal at the start of the season if he still wasn't into it then he could stop. Well, he wasn't into it anymore. Maybe some day he'll get back out there and be my little football man again, but for now he has made a choice. With that choice came another. He has now made the local swim team! He loves it and is working very hard to be the next Michael Phelps.

And while we're on the subject of choices. I really want to re-do my kids bathroom! There's this hideous wallpaper border (that I did not put up there, I swear) that needs to come down, but then what? What color? Do I change out the shower curtain?

Choices, choices, choices... They are never ending:)

30 Days About Me (10 Years Ago & Now)

Today's prompt is a picture of you 10 years ago and a picture of you today. This is perfect because it is almost my wedding anniversary (August 17) and even though it was 9 years ago, I am going to use this anyway :) I'm sure no one will mind.

And here we are a decade later, still going strong. This man can drive me crazy like no other, and yet he can love me like no other in that same instant.

Wow, it really doesn't seem like that long. All the changes that have taken place, all the things that have stayed the same. One last treat, me in High School(junior year I think) AHHH SCARY!

It was nice reflecting today. Now I feel old!

It's Like MTV Cribs!

I have no clue if MTV Cribs is still on Television, in fact... I have no clue if MTV is even still on Television! My TV programming mostly consists of Disney Channel, Nick Jr. and Sprout these days. But if you ever saw this ridiculous show about pop stars and rappers showing off their 50 custom built cars, their gold toilet seats and the ocean view from their 10 story mansions, you've seen their fridge too. Yup, that's right. Inevitably every episode they would waltz over to their refrigerator and show off what was inside.

Well guess what? I'm not a rapper. (Shocking, yes I know, I come across as so gangsta sometimes!) Do you want to see my fridge anyway? Sure you do!

Look at all that good stuff! Trust me, it hasn't always looked that way (remember, my way too young hubby who almost had a heart attack last week *eek!*) We have gutted the fridge and pantry of anything dangerous for him. Meaning all the sugary, fatty goodies. Now it's filled with Salmon fillets, locally grown fruits and veggies, organic yogurts, Edamame, flavored waters, natural peanut butter, healthy eggs and much more. Oh and a little yummy Champagne to keep me sane. ha ha.

This dietary change has been so easy when my husbands life is on the line. We've had so much fun discovering new recipes and weird new foods we didn't even know existed! Like these yummy snacks:

Yellow carrots! WHAT?! That's so cool! Sure I know it's a little stupid to be excited about carrots of another color. But when you're limited on what you can eat the small changes make a big difference. And they taste so good too!

OK. hummm... I guess this isn't really like MTV Cribs, but I hope you had fun peeking in my refrigerator. I am always looking for new ways to cook a vegetable so any ideas you have I'll take'em.

I hope you all had a wonderful Christmas and if you maybe ate a little too much around the table with family or while baking cookies for Santa then eat your veggies!

au revoir, adieu, ciao, till next time...

To Veg, Revisited...

This is an old blog of mine from over 2 years ago. Seeing as my husbands health is a serious concern these days, I am taking our family nutrition to a whole new level. The black text is new input, my views have changed on a few things. Hope you enjoy :)

People always say "Knowledge is power" this is very true. But, knowledge can also be a burden in a way. Let me explain:

Before I had children I was a successful vegetarian for about a year. Then one day my husband and I were eating lunch at Ruby Tuesdays. He got up to use the restroom and when he returned to the table his cheeseburger was gone, I ate it. I couldn't help it, something in me needed to eat it. Well, that's how we found out we were going to be parents. My body needed those proteins and it didn't matter what it was, I was going to eat it. Since then I have tried to go back "Veggie" quite a few times, but have been unsuccessful. Translation: I was being lazy about my nutrition. Being a mom became all consuming & I let myself go. In more ways then just food... Have you SEEN my waist line?? AAHHHH!

One of the hard things about living in a very small town is your choices of food. The closest health food store is a 90 minute drive, and don't even get me started on healthy restaurants to choose from for dinner around here. McDonald's, Burger King, Taco Bell, Wendy's, etc. You get my point. Every time I attempt to eat the way I want to eat I am left with only a head of lettuce, and starving. Excuses, excuses, excuses! Do you hear the whining in this paragraph? I'm lame. The answer to my "small town problem" is easy. Have no clue why I didn't see it then. Step 1: get fresh produce from the local farms, and/or plant a garden. Step 2: cook at home!

Whenever I am enjoying a burger there is this huge part of me that feels so guilty. I am smarter then this. What is wrong? My main problem with the meat industry is how the animals are treated. Why do we need to torture in such an inhumane way just to be fed? Many years ago when men would go out and hunt for food they would only kill what they needed, and use every bit of that animal. Native Americans were experts at this. But now it's heartless, and even though the food may be good, every time we do eat meat we are contributing to these horrible acts that go on today in slaughter houses. Be advised, I wrote this prior to "Food, Inc." WOW was that an eye opening documentary! And as of late my husband being in the hospital has also been a huge motivator to change my eating habits. Not so much guilt, but necessity.

My husband is a meat and potatoes kind of guy, he is also the main cook in our home. What's a girl to do? (Not anymore! Red meat and starch is a NO NO for people with heart problems. He is now a salad and fish guy.) I need to find a happy medium. I need to find a Vegetarian cook book for people who can't cook. Oh and have no resources for ingredients other then a small town grocery store. Knowledge is power, yes it is. I have seen things about this industry, I have learned about the health benefits to eliminating meat from my diet. I consider myself an animal loving environmentalist. I just can't figure out why I am having such a tough time with this one. Any thoughts? K, as much as I understand, and sympathize with the "old me," I am no longer seeking guidance on how to do something I want to do, I'm living it. So what are my new challenges with food? Ingredient labels!!

My husband can't eat a lot of Sodium, Trans fat and Saturated fat. Yeah well those 3 ingredients are in EVERYTHING! The best way to keep these things out of his diet is to eat Vegan (eating no animal or dairy products at all.) This is HARD. So we're going to take baby steps...

We will keep fish in our diet, it's like #1 on the heart healthy list of what to eat. Egg whites, at this point i'm not ready to lose my wonderful yummy eggs. And grilled Chicken breast. We can do so many meals with chicken and our kids love it. Very limited Cheese & butter, slowly eliminating it all together. And of course we are eating TONS of fruits and veggies.

Hummmm. Fish, chicken, eggs, cheese and butter. Doesn't sound Vegan at all! Moral of the story is we are trying. We are making permanent changes & I fear if we do a 180 degree change it won't last. I think in the end if we are eating a vegetarian diet with fish every now and then I will be ecstatic!

I used to think the whole "Knowledge is power" part about food meant knowing how the animals are treated, and the processes our food goes through to get onto our table. But I have to say as important as that is, knowledge is power can sum up finding out my husband has heart issues. We have the knowledge now we are taking the power and eating right.

Sheesh! Sorry, I didn't realize this post had gotten so long. Hope I kept you entertained. I would love any recipes you would like to share for healthy yummy food :)

Hello From The Trenches!

Hey Everyone! How have you all been? Geez, I have missed the "blog-sphere" but have also enjoyed the break. What has been going on you ask? Most of you were correct in your guess that we are moving. I couldn't come on here and talk about my husbands job hunting till he had something firmed up, heaven forbid someone from his current job found out and we were jobless because of MY blog. I would have never lived that down!

OK, on to more important things...

Where are we moving? You will never guess, nope not in a million years...

Spanish moss, warm southern rain, small town...

Good fried chicken, millions of mosquito's, front porch rockin'...

Green growth everywhere, humid nights, fireflies...

Friends, family, home...

Is any of this ringing a bell? Obviously we're moving back to the southeast, but the plot thickens, we're moving back to the SAME TOWN we moved from to get to Arizona!? How crazy is that?

I wanted more for my children then I thought a small southern town could offer, but what I have come to realize is we had it all to begin with. Great friends, a great community, life was good. Luckily my hubby's old job has wanted him back since the moment we left, so getting a position there was pretty easy (it's an even better position than he had before we moved!).

Doesn't the saying "The grass isn't always greener" come to mind? ha ha

Now for the yucky, not fun stuff... Trying to sell our home. I LOVE this house, you all know the time we've spent painting & decorating it. It's perfect, just in the wrong place. I really wish the tornado from the "Wizard of Oz" would pick my home up and drop it down in South Carolina. But, that won't happen, bummer. Our house is on the market now, we've had a few lookers but nothing has come of it yet. Also when we get back to SC we have to rent for awhile, not a big deal for most, but you try renting a home with 3 dogs!!! Impossible.

There is a lot on our plate right now, so far I have dealt with the stress pretty well. I've only had one melt down in a restaurant parking lot sobbing into my hubby's arms. My hubby begins his new (old) job in December, if the home doesn't sell by then I will be staying in Arizona till it does with the munchkins and pups.

Please keep us in your prayers for an easy transition and guidance as life once again takes another crazy turn in our life. And if you know anyone looking for a home in AZ let me know *wink wink*

Who Woulda Thunk It?

Happy Anniversary Sweetie!
I love you so much

"Bless The Broken Road"
by: rascal flatts

I set out on a narrow way many years ago
Hoping I would find true love along the broken road
But I got lost a time or two
Wiped my brow and kept pushing through
I couldn't see how every sign pointed straight to you

Every long lost dream led me to where you are
Others who broke my heart they were like Northern stars
Pointing me on my way into your loving arms
This much I know is true
That God blessed the broken road
That led me straight to you

I think about the years I spent just passing through
I'd like to have the time I lost and give it back to you
But you just smile and take my hand
You've been there you understand
It's all part of a grander plan that is coming true

Now I'm just rolling home
Into my lover's arms
This much I know is true
That God blessed the broken road

That led me straight to you

Saturday Q-Shot: Eyes

I am so excited about this new Meme that my good friend Melissa is doing over at Spoiled Mommy. Each week she will ask a question that you need to answer with a photo. Sounds like fun!

This weeks question is "What is the color of your eyes?"

click photo for a large (prettier) version.

I answered this question with the color of my husbands eyes. He has greenish-gold eyes, and depending on the sunlight you can see hints of light blue. Every color in this picture I can see when he looks at me. This picture was taken while on a hay ride in South Carolina, I got so lucky that it came out so well :)

Join me each week

Clean Energy & My first Guest Post!

Every now & Then I like to do a serious post about what's going on in the world, so here you go:

Recently there has been a lot of talk in the media about different ways to create electricity, and the impact it has on our planet. People keep talking about "Clean Coal," what is it? I thought what better person to discuss this topic then my husband! He has been in the power industry (Civilian & Navy) for over 18 years and is quite an authority on the subject. Let me give you a heads up... this is a LONG post, but I promise if you make it to the end you will learn a heck of a lot. You might even be surprised by which form of power generation is the cleanest!

“Clean Coal”, it doesn’t exist at this time. Maybe they really mean “cleaner coal”.

Clean coal is a term loosely used and not really understood. All that is needed is an internet search for “clean coal” or maybe even “carbon capture”, and all the information that you will need appears.

“Coal is the dirtiest of all fossil fuels. When burned, it produces emissions that contribute to global warming, create acid rain and pollute water. Clean coal is an umbrella term used to promote the use of coal as an energy source by emphasizing methods being developed to reduce its environmental impact. These efforts include chemically washing minerals and impurities from the coal, gasification, treating the flue gases (gases released by the burning of coal) with steam to remove sulfur dioxide, and carbon capture and storage technologies to capture the carbon dioxide from the flue gas. These methods and the technology used are described as clean coal technology. Major politicians and the coal industry use the term "clean coal" to describe technologies designed to enhance both the efficiency and the environmental acceptability of coal extraction, preparation and use, with no specific quantitative limits on any emissions, particularly carbon dioxide.”

So, based on the information above, which part of it came directly from the Department of Energy (DOE) website, you can see that the term “clean coal” can mean a variety of things. Some coal burning facilities have taking steps that can be considered cleaning coal, but by cleaning it they are just removing unwanted impurities to prevent burning them. This has reduced the release of items such as sulfur and mercury to the environment which does reduce air pollution, but really does nothing for the “Global Warming” issue that so many people are concerned about. Global warming is the result of Carbon Dioxide (CO2) released from the burning of fossil fuels. It doesn’t matter how many times the coal is “cleaned”, it is still a carbon based fuel, and it will release CO2 when burned.

The only way to reduce emission of CO2 is by using a method of carbon capture. This technology is based on stripping the CO2 from the exhaust of plants that burn fossil fuels (by the way burning natural gas also produces CO2, just not as much as coal), and storing it in a designated location. Below is some information on carbon capture. Part of this info is also from the DOE.

“Existing capture technologies, however, are not cost-effective when considered in the context of sequestering CO2 from power plants. Most power plants and other large point sources use air-fired combustors, a process that exhausts CO2 diluted with nitrogen. Flue gas from coal-fired power plants contains 10-12 percent CO2 by volume, while flue gas from natural gas combined cycle plants contains only 3-6 percent CO2. For effective carbon sequestration, the CO2 in these exhaust gases must be separated and concentrated.

CO2 is currently recovered from combustion exhaust by using amine absorbers and cryogenic coolers. The cost of CO2 capture using current technology, however, is on the order of $150 per ton of carbon - much too high for carbon emissions reduction applications. Analysis performed by SFA Pacific, Inc. indicates that adding existing technologies for CO2 capture to an electricity generation process could increase the cost of electricity by 2.5 cents to 4 cents/kWh depending on the type of process.”

Here are some other interesting facts….thanks DOE.

FACT: The International Energy Agency’s (IEA) World Energy Outlook estimates that the world’s primary energy needs will grow by 55% by 2030, with fossil fuels remaining a significant source of global energy supply. This IEA report also predicts a remarkable 73% increase in global demand for coal, driven largely by China and India’s growing economies.

FACT: In 2007, the U.S. consumed 1.1 billion tons of coal. By 2030, U.S. demand for coal is expected to grow by 48 percent, thus increasing to an estimated 1.7 billion tons, according to the U.S. Department of Energy’s (DOE) Energy Information Administration.

FACT: Since 2001, the Bush Administration has invested more than $2.5 billion on clean coal research and development (R&D) technology. (What? The republican’s came up with this?)

FACT: On February 27, 2003, the federal government announced FutureGen, a $1 billion initiative to create a coal-based power plant focused on demonstrating a revolutionary clean coal technology that produces hydrogen and electricity and mitigates greenhouse gas emissions.

Financial Benefits:

• Limits taxpayer financial exposure. Under the restructured approach, DOE will join industry in its efforts to build IGCC plants by providing funding for the addition of CCS technology to multiple plants. Under the concept announced in 2003, taxpayers would have funded 74% of the total project cost, as well as potentially 74%of all cost escalations.

• Provides demonstration of IGCC-CCS technology, enabling the FutureGen initiative to test the technology integration and clear hurdles associated with early technology demonstration to allow rapid commercial deployment after 2015.

• Leverages the Administration’s investment of more than $2.5 billion in clean coal technology since 2001.

• Establishes commercial feasibility and formulates a model that industry could use to deploy commercial-scale plants that each sequesters at least one million metric tons of carbon dioxide annually

The key points from facts above are that the use of coal as an energy source is going to increase dramatically. Carbon capture is very expensive. We do not currently have the technology available to perform carbon capture on large coal burning plants. 2015 is the earliest date when the technology may be available. And we the taxpayers are paying for at least 74% of the research.

So, I believe that I have provided enough info. In summary, the term “clean coal” should really be “cleaner coal”. The release of CO2 is not reduced by our current methods. Therefore, using current terms, “clean coal” is not the immediate solution for the reduction of greenhouse gases or global warming. And, now that you are armed with this knowledge, is it logical for the government’s energy plan to base billions of dollars in spending on technology that doesn’t even exist?

Maybe we should consider solar power? Solar power is a very clean source of electricity. Unless you take into account the batteries that are needed to store the energy. The last time I checked, batteries were still full of acid and lead. Nowhere near as bad as burning coal, but not perfect. The real question is how realistic is it to power cities using solar power.

An area of 3 to 3.5 acres was required to generate 1 MW (megawatt or 1 million watts) of electricity, while the life span of a solar plant is roughly thirty years. The life span is very good assuming that a solar panel can really last 30 years. I do not have any information to disprove that claim, so I must believe it to be accurate (even though the source of the information works for a solar panel production company… and salesmen never lie).

It takes approximately 3.5 acres of solar panels (not including any building or battery storage area involved) to produce 1 MW of power. Let’s put that in perspective. Palo Verde Nuclear Plant produces around 4200 MW of electricity. How many acres of solar panels would it take to equal that? 14,700 acres of solar panels would be needed. That’s a lot of land. I believe this fact alone will prevent solar power from ever becoming a major source of commercial electricity production.

I do believe that smaller applications of solar power, such as panels placed on building and houses, would be beneficial supplementing the production of electricity. If you live in Seattle, solar panels may not be a wise investment. But, in other, sunnier, parts of the country, businesses and homes can reduce their monthly electric bill by supplementing their use with solar panels.

So, where does that leave us? What is the cleanest, most environmentally friendly, efficient method for us to generate the electricity that will be needed to meet the growing demands of the American citizens? I say Nuclear Power. But, this is a topic that I will discuss later. For now, you can think about, debate, or dispute what I have written. But please remember, everything in italics is a fact not an opinion. Some of those facts were provided by our government (namely the DOE). And, as much as you may want to, you can’t argue with facts.

Can you tell my hubby is an instructor in the power industry? Is it that obvious?

Take my advice and read about things you don't understand, check the facts the government gives you. We live in a time where most just nod their heads along with the news reporters. Be free thinking, and decide for yourself what is or isn't true, not just because some politician, or anchor man said so.

Chugging Along

Do you ever wonder how women all over the world stay sane? I do. I wonder why I have not been admitted to a loony-bin. Seriously, I can't believe my ability to keep it all together in crazy, stressful times. So to all you mothers and wives out there, I tip my hat (even though I don't have a hat on... you get the idea) to you all.

I have totally lost my "center," my mental place of comfort. I really should start doing yoga again.

Yes, the house hunting journey is still continuing. We are settling into Arizona well. Everything is just all new and out of the ordinary for us which makes tensions high among my hubby and I. I love him dearly, but there are times I want to smoother him with a pillow in his sleep. Oops, did I say that out loud? I mean hug and kiss him :)

Unfortunately in all this change my blog has been the neglected part of my life. (well, laundry & dishes too.) I will be doing my best to update here more now that things seem to be settling down a bit.

I think that's about it for now, sorry I can't be a bit more interesting. All my energy is going to not "taking out" my hubby. Shoot, I mean snuggling with him...

I know I have been MIA in the blog comment world. I am sorry, I try my best to share the love I receive. But, this week has been trying. I am amazed that I am still sane. Mothers and wives all over the world will forever have my respect for surviving kids/husbands!!!

I'll be back to reading your blogs soon, just a few more days of insanity and I should be good to go :)

I hope you all have a wonderful, super duper weekend!
